Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add mascarpone cheese, powdered sugar, and vanilla extract, and continue to whip until combined.
- In a separate bowl, mix crushed Lotus Biscoff cookies with melted butter to create the crust.
- Layer the cookie mixture at the bottom of serving cups.
- Spoon the cream mixture over the crust and smooth the top.
- Refrigerate for at least 2 hours before serving.
- Garnish with chocolate shavings and serve chilled.
