Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup cherry pie filling
  • ¼ cup fresh lemon juice
  • 2 tablespoons fresh lime juice
  • ½ cup pistachios, chopped

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, lemon juice, and lime juice until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set. Remove from the oven and let it cool.
  8. Once cooled, top with cherry pie filling and chopped pistachios. Refrigerate for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, bake it longer and keep it in the oven while it cools.
  • For a variation, consider adding almond extract for extra flavor.
