- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- ½ cup cherry pie filling
- ¼ cup fresh lemon juice
- 2 tablespoons fresh lime juice
- ½ cup pistachios, chopped
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in sour cream, lemon juice, and lime juice until fully incorporated.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set. Remove from the oven and let it cool.
- Once cooled, top with cherry pie filling and chopped pistachios. Refrigerate for at least 4 hours before serving.
Notes
- For a firmer cheesecake, bake it longer and keep it in the oven while it cools.
- For a variation, consider adding almond extract for extra flavor.
