A heavenly blend of tangy lemon and sweet raspberry in a creamy cheesecake.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup raspberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Blend in sour cream, then add eggs one at a time.
  6. Stir in vanilla extract and lemon juice.
  7. Pour the filling over the crust in the pan.
  8. Spoon raspberry puree on top and swirl with a knife.
  9. Bake for 50-60 minutes, until the center is set.
  10. Allow to cool before refrigerating for at least 4 hours.

Notes

  • For best results, use full-fat cream cheese.
  • Top with fresh raspberries for decoration.
