- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 1/4 cups sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry purée
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese and 1 1/4 cups of sugar until smooth.
- Add vanilla extract and mix well.
- Add eggs, one at a time, mixing well after each addition.
- Stir in sour cream until well incorporated.
- Pour the filling over the crust.
- Bake for 55-60 minutes or until the center is set.
- Let cool before adding the strawberry topping.
- Top with sliced strawberries and drizzle with strawberry purée before serving.
Notes
- For best results, let the cheesecake chill in the refrigerator for at least 4 hours before serving.
- Garnish with fresh strawberries for an elegant touch.
