- 2 large sweet potatoes
- 1/4 cup pure maple syrup
- 1/2 cup ricotta cheese
- 1/3 cup fresh cranberries
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 tsp cinnamon
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss with olive oil, salt, pepper, and cinnamon.
- Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes, until tender.
- Meanwhile, combine cranberries, maple syrup, and lemon juice in a saucepan. Cook over medium heat until cranberries burst.
- In a bowl, mix ricotta cheese with a pinch of salt.
- Once sweet potatoes are done, drizzle with cranberry mixture and top with ricotta. Serve warm.
Notes
- For a sweeter taste, add more maple syrup to the sweet potatoes.
- You can substitute ricotta with cream cheese if preferred.
