Ingredients

  • 2 large sweet potatoes
  • 1/4 cup pure maple syrup
  • 1/2 cup ricotta cheese
  • 1/3 cup fresh cranberries
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss with olive oil, salt, pepper, and cinnamon.
  3. Spread the sweet potatoes on a baking sheet and bake for 25-30 minutes, until tender.
  4. Meanwhile, combine cranberries, maple syrup, and lemon juice in a saucepan. Cook over medium heat until cranberries burst.
  5. In a bowl, mix ricotta cheese with a pinch of salt.
  6. Once sweet potatoes are done, drizzle with cranberry mixture and top with ricotta. Serve warm.

Notes

  • For a sweeter taste, add more maple syrup to the sweet potatoes.
  • You can substitute ricotta with cream cheese if preferred.
