  • 2 cups tomatoes, chopped or cherry tomatoes halved

  • 1 tablespoon sugar (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano or Italian seasoning
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. In a large bowl, combine the sliced cucumbers, chopped or halved tomatoes, and thinly sliced red onion.
  2. In a small bowl or jar, whisk together the vinegar, olive oil, sugar (if using), salt, pepper, garlic powder, and oregano.
  3. Pour the marinade over the vegetables and toss well to coat evenly.
  4. Cover the bowl and refrigerate for at least 1 hour to allow flavors to blend.
  5. Stir occasionally while chilling, then garnish with fresh herbs before serving.
