- 1 pound boneless chicken breast
- 4 cups chicken broth
- 2 cups diced tomatoes
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup heavy cream
- 1/2 cup parsley, chopped
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add chicken breast and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Add tomatoes, carrots, celery, Italian seasoning, salt, and pepper.
- Lower the heat and let it simmer for 20 minutes.
- Stir in the heavy cream and simmer for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a creamier soup, blend a portion of the soup and return it to the pot.
- Adjust the seasoning to taste based on your preference.
