- 1 pound ground turkey
- 4 slices turkey bacon, chopped
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mashed potatoes, prepared
- 1/4 cup butter, softened
- 1/4 cup milk
- 2 tablespoons chives, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together ground turkey, turkey bacon, breadcrumbs, Parmesan cheese, egg, garlic, Worcestershire sauce, salt, and pepper.
- Carefully spoon the meat mixture into a muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes or until fully cooked.
- While baking, prepare whipped potatoes by mixing the mashed potatoes with butter, milk, and chives until creamy.
- Once the meatloaf cupcakes are done, remove from the oven, let cool slightly, and top with whipped potatoes.
Notes
- For a spicy kick, add red pepper flakes to the meat mixture.
- These can be served as a fun party appetizer or a main dish.
