  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mashed potatoes, prepared
  • 1/4 cup butter, softened
  • 1/4 cup milk
  • 2 tablespoons chives, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together ground turkey, turkey bacon, breadcrumbs, Parmesan cheese, egg, garlic, Worcestershire sauce, salt, and pepper.
  3. Carefully spoon the meat mixture into a muffin tin, filling each cup about 3/4 full.
  4. Bake for 25-30 minutes or until fully cooked.
  5. While baking, prepare whipped potatoes by mixing the mashed potatoes with butter, milk, and chives until creamy.
  6. Once the meatloaf cupcakes are done, remove from the oven, let cool slightly, and top with whipped potatoes.
