- 1 pound ground beef
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chopped onion
- 2 cups mashed potatoes
- 1/4 cup butter
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/4 cup shredded cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, pepper, and onion. Mix until well combined.
- Press the mixture into a muffin tin to form cupcake shapes.
- Bake for 25-30 minutes or until cooked through.
- While the meatloaf cupcakes are baking, prepare the whipped potatoes by mixing mashed potatoes with butter, milk, garlic powder, and cheese until creamy.
- Once the meatloaf cupcakes are done, remove them from the oven and top with the whipped potato mixture.
- Return to the oven for an additional 5-10 minutes to heat the topping.
Notes
- For extra flavor, consider adding herbs to the meat mixture.
- You can use sweet potatoes instead of regular potatoes for the topping.
