- 3 large beets, peeled and sliced
- 2 medium sweet potatoes, peeled and sliced
- 1 cup crumbled feta cheese
- 1/2 cup walnuts, chopped
- 3 tablespoons olive oil
- 2 tablespoons fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, layer the sliced beets and sweet potatoes alternately.
- Drizzle olive oil over the top and season with salt, pepper, and thyme.
- Sprinkle crumbled feta cheese evenly over the layered vegetables.
- Top with chopped walnuts.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes until golden.
- Let cool for a few minutes before serving.
Notes
- For added flavor, you can include garlic between the layers.
- This dish is best served warm.
