  • 2 medium sweet potatoes, peeled and sliced

  • 1/2 cup walnuts, chopped

  • 2 tablespoons fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, layer the sliced beets and sweet potatoes alternately.
  3. Drizzle olive oil over the top and season with salt, pepper, and thyme.
  4. Sprinkle crumbled feta cheese evenly over the layered vegetables.
  5. Top with chopped walnuts.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 15 minutes until golden.
  8. Let cool for a few minutes before serving.
