- 2 medium sweet potatoes
- 8 ounces burrata cheese
- 4 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Wash and slice the sweet potatoes into rounds.
- Arrange the sweet potato rounds on a baking sheet and drizzle with olive oil, salt, and pepper.
- Bake for 20-25 minutes, or until tender.
- While the sweet potatoes are baking, cook the turkey bacon in a skillet until crispy.
- Remove bacon from skillet and crumble.
- Once the sweet potatoes are cooked, top each round with a piece of burrata cheese.
- Sprinkle crumbled turkey bacon and fresh basil on top.
- Serve warm and enjoy!

- Feel free to substitute regular bacon for a different flavor.
- Add a drizzle of balsamic glaze for extra flavor.
