- 1 pound ground turkey
- 6 slices turkey bacon
- 1 cup cornmeal

- 1 can diced tomatoes with green chilies
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the turkey bacon until crispy, then crumble it.
- In a bowl, mix the cornmeal, buttermilk, eggs, baking powder, and salt until smooth.
- Fold in the cooked turkey, crumbled bacon, cheese, and tomatoes.
- Pour the mixture into a greased casserole dish and bake for 30-35 minutes.
- Let cool slightly before serving.

- For added flavor, add jalapeños.
