Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the ground beef, breadcrumbs, egg, onion, bell pepper, cheese, taco seasoning, ketchup, salt, and pepper.
- Mix until well combined and shape into a loaf.
- Place the meatloaf in a baking dish and top with additional ketchup if desired.
- Bake for about 1 hour or until the meatloaf is cooked through.
- Let it rest before slicing and serving.
