Ingredients

  • 4 large potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for 45-60 minutes until tender.
  3. While potatoes bake, cook turkey bacon in a skillet until crispy. Chop into pieces.
  4. Once the potatoes are done, cut them in half and scoop out some flesh into a bowl.
  5. Mix the potato flesh with sour cream, cheese, turkey bacon, cumin, chili powder, salt, and pepper.
  6. Fill the potato skins with the mixture, top with more cheese, and return to the oven for 10-15 minutes until cheese is melted.
  7. Garnish with sliced green onions before serving.

Notes

  • For extra flavor, add jalapeños or other toppings as desired.
  • Can substitute regular bacon for turkey bacon for a non-turkey version.
