- 4 large potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup sliced green onions
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for 45-60 minutes until tender.
- While potatoes bake, cook turkey bacon in a skillet until crispy. Chop into pieces.
- Once the potatoes are done, cut them in half and scoop out some flesh into a bowl.
- Mix the potato flesh with sour cream, cheese, turkey bacon, cumin, chili powder, salt, and pepper.
- Fill the potato skins with the mixture, top with more cheese, and return to the oven for 10-15 minutes until cheese is melted.
- Garnish with sliced green onions before serving.
Notes
- For extra flavor, add jalapeños or other toppings as desired.
- Can substitute regular bacon for turkey bacon for a non-turkey version.
