- 1 pound turkey bacon
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup salsa
- 2 cups shredded cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook turkey bacon until crispy, then crumble.
- In a large bowl, combine cooked rice, black beans, corn, salsa, and crumbled turkey bacon.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.

- Feel free to add other vegetables such as bell peppers or onions.
