Ingredients

  • 1 pound turkey bacon
  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • 2 cups shredded cheese
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook turkey bacon until crispy. Drain and crumble.
  3. In a large bowl, combine rice, black beans, corn, crumbled turkey bacon, cheese, and seasonings.
  4. Add salsa and mix well. Transfer to a greased casserole dish.
  5. Bake for 25-30 minutes until heated through and cheese is bubbly.
