- 1 pound turkey bacon
- 2 cups cooked rice
- 1 can black beans, drained
- 1 cup corn
- 2 cups shredded cheese
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook turkey bacon until crispy. Drain and crumble.
- In a large bowl, combine rice, black beans, corn, crumbled turkey bacon, cheese, and seasonings.
- Add salsa and mix well. Transfer to a greased casserole dish.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- For a spicier dish, add diced jalapeños.
- This casserole can be made a day ahead and baked when ready.
