- 2 cups cooked chicken, shredded
- 1 cup cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup green onions, sliced
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 package of frozen mixed vegetables (optional)
- 1 cup crushed buttery crackers
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together the chicken, cream of chicken soup, sour cream, 1 cup of cheddar cheese, green onions, garlic powder, black pepper, and mixed vegetables (if using).
- Transfer the mixture to a greased 9x13 inch baking dish.
- Top with the remaining cheddar cheese and crushed crackers.
- Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- This casserole can be made ahead of time and refrigerated before baking.
- For added flavor, consider using rotisserie chicken.
