- 4 slices turkey bacon
- 1 cup diced chicken ham
- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced potatoes
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups greens (spinach or kale)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add turkey bacon and cook until crispy.
- Remove bacon and chop into pieces.
- Add chopped carrots, celery, and garlic to the pot and sauté for 5 minutes.
- Add diced potatoes, chicken ham, thyme, and black pepper; stir well.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for 20 minutes.
- Add greens and chopped turkey bacon back to the pot; cook for an additional 5 minutes.
- Serve hot and enjoy!
