- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 1 teaspoon peppermint extract
- 1 cup mint chocolate chips
- 1/2 cup additional powdered sugar for coating
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter and powdered sugar until smooth.
- Mix in the flour, cornstarch, and salt until just combined.
- Add in the peppermint extract and mint chocolate chips, stirring until evenly distributed.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the bottoms are lightly golden.
- Remove from the oven and allow to cool for a few minutes.
- Roll warm cookies in the additional powdered sugar before transferring to a wire rack to cool completely.
Notes
- These cookies can be made ahead of time and stored for freshness.
- A sprinkle of festive colored sugar can be added for extra decoration.
