Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the flour, mint extract, and salt until combined.
- Fold in the mini chocolate chips.
- Roll the dough into small balls and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from oven and let cool slightly, then roll in powdered sugar.
- Allow cookies to cool completely on a wire rack.
