- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of a greased muffin tin to form a crust.
- Bake the crusts for about 15 minutes or until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder until well combined.
- Pour the lemon mixture over the baked crusts.
- Bake for an additional 20 minutes, until set.
- Allow to cool, then dust with more powdered sugar if desired.
Notes
- For best flavor, use freshly squeezed lemon juice.
