- 2 cups mushrooms, sliced
- 1 large onion, caramelized
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 slices bread
- 1 cup cheese, grated
Instructions
- Heat olive oil in a pot over medium heat.
- Add the sliced mushrooms and cook until soft.
- Stir in the caramelized onions and thyme.
- Add vegetable broth, salt, and pepper; bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- While soup is cooking, prepare cheesy toasties; top bread with cheese and broil until melted.
- Serve soup hot with cheesy toasties on the side.
Notes
- For a thicker soup, blend part of the soup before serving.
- Feel free to add other vegetables like carrots or celery.
