Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add the sliced mushrooms and cook until soft.
  3. Stir in the caramelized onions and thyme.
  4. Add vegetable broth, salt, and pepper; bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. While soup is cooking, prepare cheesy toasties; top bread with cheese and broil until melted.
  7. Serve soup hot with cheesy toasties on the side.
