- 2 cups granulated sugar
- 1 cup brown sugar
- 1 cup heavy cream
- 1 cup pecans, chopped
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- In a saucepan, combine granulated sugar, brown sugar, and heavy cream.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Once boiling, stop stirring and let it boil until it reaches the soft ball stage (234°F to 240°F).
- Remove from heat and stir in pecans, vanilla extract, and salt.
- Drop spoonfuls of the mixture onto waxed paper and let them cool.
Notes
- To test the soft ball stage, drop a small amount of the mixture into cold water. If it forms a soft ball, it’s ready.
