Instructions

  1. In a saucepan, combine granulated sugar, brown sugar, and heavy cream.
  2. Bring the mixture to a boil over medium heat, stirring constantly.
  3. Once boiling, stop stirring and let it boil until it reaches the soft ball stage (234°F to 240°F).
  4. Remove from heat and stir in pecans, vanilla extract, and salt.
  5. Drop spoonfuls of the mixture onto waxed paper and let them cool.

Notes

  • To test the soft ball stage, drop a small amount of the mixture into cold water. If it forms a soft ball, it's ready.
