Instructions
- In a saucepan, combine the brown sugar, butter, and vanilla extract over medium heat.
- Bring the mixture to a boil and let it boil for 2 minutes.
- Remove from heat and stir in the shredded coconut, chopped pecans, and quick oats until well combined.
- Drop spoonfuls of the mixture onto parchment paper and let them cool and set.
Notes
- For added flavor, you can toast the pecans before adding them to the mixture.
- Make sure to allow the cookies to cool completely before serving.
