- 1 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, softened

- 1 teaspoon vanilla extract

- 2 cups fresh Nova Scotia blueberries
- 1 cup heavy cream
- 3 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, milk, and vanilla, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing gently.
- Fold in the blueberries.
- Pour the batter into a greased cake pan and bake for 30-35 minutes.
- While the cake cools, whip the heavy cream with powdered sugar until stiff peaks form.
- Once the cake is completely cool, top it with the whipped cream.
- Garnish with additional blueberries if desired.
Notes
- For a more indulgent treat, add a layer of blueberry compote between the cake and the whipped cream.
- Make sure to gently fold the blueberries into the batter to avoid breaking them.
