Instructions

  1. In a saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
  2. Add the milk gradually, and cook over medium heat, stirring constantly until the mixture thickens.
  3. In a separate bowl, beat the egg yolks, then gradually whisk in some of the hot chocolate mixture to temper the eggs.
  4. Return the egg mixture to the saucepan and cook for an additional 2-3 minutes.
  5. Remove from heat and stir in the butter and vanilla.
  6. Pour the filling into the pre-baked pie crust and let it cool to room temperature.
  7. Chill in the refrigerator for at least 2 hours before serving.
