- 1 cup Arborio rice
- 4 cups whole milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 cup raisins (optional)
Instructions
- In a large saucepan, combine the rice, milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture comes to a boil.
- Reduce the heat to low and simmer gently for about 30-40 minutes, stirring often, until the rice is tender and the pudding is creamy.
- In a separate bowl, beat the eggs and mix in the vanilla extract and cinnamon.
- Once the rice is cooked, gradually stir in a small amount of the hot rice mixture into the egg mixture to temper it.
- Slowly pour the tempered egg mixture back into the saucepan, stirring constantly.
- Continue to cook for an additional 5 minutes, stirring constantly until thickened. If using, stir in the raisins.
- Remove from heat and let cool slightly before serving.

- Serve warm or chilled, topped with extra cinnamon or a drizzle of cream.
