  • 1/2 cup raisins (optional)

Instructions

  1. In a large saucepan, combine the rice, milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture comes to a boil.
  2. Reduce the heat to low and simmer gently for about 30-40 minutes, stirring often, until the rice is tender and the pudding is creamy.
  3. In a separate bowl, beat the eggs and mix in the vanilla extract and cinnamon.
  4. Once the rice is cooked, gradually stir in a small amount of the hot rice mixture into the egg mixture to temper it.
  5. Slowly pour the tempered egg mixture back into the saucepan, stirring constantly.
  6. Continue to cook for an additional 5 minutes, stirring constantly until thickened. If using, stir in the raisins.
  7. Remove from heat and let cool slightly before serving.
