- 4 pieces chicken thighs
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the chicken thighs to the bowl, coating them well with the marinade.
- Place the marinated chicken in a single layer in a large oven-safe pan.
- Arrange cherry tomatoes around the chicken.
- Bake in the preheated oven for about 30 minutes or until the chicken is cooked through.
- In the last 5 minutes of cooking, add spinach to the pan and return to the oven until wilted.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- This dish is great served with rice or a fresh salad.
