  • 4 pieces chicken thighs

  • 1 cup cherry tomatoes
  • 1 cup spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl, coating them well with the marinade.
  4. Place the marinated chicken in a single layer in a large oven-safe pan.
  5. Arrange cherry tomatoes around the chicken.
  6. Bake in the preheated oven for about 30 minutes or until the chicken is cooked through.
  7. In the last 5 minutes of cooking, add spinach to the pan and return to the oven until wilted.
