- 4 pieces chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1/4 cup honey
- 1/4 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mixed vegetables
Instructions
- In a large pan, heat olive oil over medium heat.
- Add chicken thighs and cook until browned on both sides.
- In a bowl, mix honey and BBQ sauce, then pour over the chicken.
- Add rice and chicken broth to the pan.
- Stir in garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for about 20 minutes, add mixed vegetables, and continue cooking until rice is tender.
- Remove from heat and let it sit for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken in the BBQ sauce mixture for a few hours before cooking.
- Feel free to substitute vegetables based on your preference.
