- 1 pound chicken breast
- 2 cups orzo pasta
- 2 cups heavy cream
- 1 tablespoon Cajun seasoning
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken, and cook until browned and cooked through. Remove and set aside.
- In the same pot, add onion, bell pepper, and garlic; sauté until softened.
- Add orzo, chicken broth, Cajun seasoning, and heavy cream; stir to combine.
- Bring to a boil, then reduce heat and simmer until orzo is cooked.
- Stir in Parmesan cheese and cooked chicken; mix well.
- Serve warm, garnished with extra Parmesan if desired.
Notes
- For extra spice, add more Cajun seasoning or crushed red pepper flakes.
- You can substitute chicken with shrimp for a different flavor.
