  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until soft.
  2. Add the bell pepper, tomatoes, zucchini, and broccoli. Cook for a few minutes until vegetables are tender.
  3. Add the pasta, vegetable broth, and Italian seasoning. Stir well to combine.
  4. Bring to a boil, then reduce heat and simmer until pasta is cooked and the liquid is mostly absorbed, about 10-12 minutes.
  5. Season with salt and pepper to taste before serving.
