- 4 chicken breasts
- 1 pound baby potatoes
- 2 cups green beans
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, thyme, salt, and pepper. Add chicken and toss to coat.
- Place seasoned chicken on a baking sheet.
- Add potatoes around the chicken and drizzle with additional olive oil, salt, and pepper.
- Bake for 25 minutes. Then add green beans to the pan.
- Return to the oven and bake for an additional 15 minutes.
- Check chicken for doneness, then serve warm.
Notes
- For extra flavor, marinate the chicken for 30 minutes before cooking.
- Feel free to swap out vegetables based on seasonal availability.
