- 1 pound Italian sausage
- 2 cups orzo pasta
- 4 cups fresh spinach
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned.
- Stir in the orzo pasta and Italian seasoning, mixing well.
- Pour in the chicken broth, bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally.
- Add the fresh spinach and continue to cook until the spinach wilts and the orzo is tender.
- Season with salt and pepper to taste before serving.
Notes
- For an extra kick, add red pepper flakes to the dish.
- Top with grated Parmesan cheese before serving for added flavor.
