  • 1 shoulder lamb
  • 10 cloves garlic, peeled
  • 1/4 cup honey
  • 3 tablespoons whole grain mustard
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 sprigs fresh rosemary
  • 1 cup olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large mixing bowl, combine the honey, mustard, salt, and pepper to create a marinade.
  3. Rub the marinade all over the lamb shoulder, making sure to cover it completely.
  4. Place the garlic cloves and rosemary in the bottom of a roasting pan, then place the lamb shoulder on top.
  5. Pour the olive oil over the lamb, ensuring it is well submersed.
  6. Cover the pan with foil and bake in the preheated oven for 4 hours.
  7. Remove the foil and bake for an additional 30 minutes to crisp the outside.
  8. Let the lamb rest for 10 minutes before slicing and serving.
