- 1 shoulder lamb
- 10 cloves garlic, peeled
- 1/4 cup honey
- 3 tablespoons whole grain mustard
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 sprigs fresh rosemary
- 1 cup olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- In a large mixing bowl, combine the honey, mustard, salt, and pepper to create a marinade.
- Rub the marinade all over the lamb shoulder, making sure to cover it completely.
- Place the garlic cloves and rosemary in the bottom of a roasting pan, then place the lamb shoulder on top.
- Pour the olive oil over the lamb, ensuring it is well submersed.
- Cover the pan with foil and bake in the preheated oven for 4 hours.
- Remove the foil and bake for an additional 30 minutes to crisp the outside.
- Let the lamb rest for 10 minutes before slicing and serving.
Notes
- For extra flavor, marinate the lamb overnight.
- Serve with roasted vegetables or a fresh salad.
