Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 leeks, sliced
  • 3 carrots, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck with salt and pepper, and sear it on all sides until browned.
  3. Remove the beef and add the leeks, carrots, and garlic. Sauté until softened.
  4. Return the beef to the pot and add the beef broth, thyme, and rosemary.
  5. Cover and transfer to the oven. Braise for 3-4 hours, or until the beef is tender.
  6. Remove from the oven and let the beef rest before slicing.

Notes

  • For more flavor, marinate the beef overnight.
  • Serve with mashed potatoes or crusty bread.
