Ingredients

- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 2 leeks, sliced
- 3 carrots, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck with salt and pepper, and sear it on all sides until browned.
- Remove the beef and add the leeks, carrots, and garlic. Sauté until softened.
- Return the beef to the pot and add the beef broth, thyme, and rosemary.
- Cover and transfer to the oven. Braise for 3-4 hours, or until the beef is tender.
- Remove from the oven and let the beef rest before slicing.
Notes
- For more flavor, marinate the beef overnight.
- Serve with mashed potatoes or crusty bread.
