Instructions
- Preheat a skillet over medium-high heat.
- Season the steaks with salt and pepper.
- Add olive oil to the skillet and sear the steaks for 4-5 minutes on each side for medium-rare.
- Add garlic butter and thyme to the pan in the last minute of cooking.
- Remove the steaks and let them rest.
- Boil the baby potatoes until tender, then toss with olive oil, salt, and pepper.
- Blanch the green beans for 3-4 minutes until bright green.
- Serve the steak alongside the herb potatoes and green beans.

- For a richer flavor, let the steaks marinate for a few hours before cooking.
