- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans cannellini beans, drained and rinsed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme

- 1/2 teaspoon black pepper
- 1 cup Parmesan cheese, grated
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until transparent.
- Stir in minced garlic and cook for another minute.
- Add the cannellini beans, diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Stir in grated Parmesan cheese and cook until melted.
- Serve warm.
