Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut into squares.
- In a bowl, mix peaches, blueberries, sugar, cornstarch, and vanilla.
- Place the fruit mixture on the puff pastry squares.
- Fold the pastry over to form a pocket and seal the edges.
- Brush the top with beaten egg.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
