- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- 1/2 cup corn syrup
- 1/2 cup brown sugar
- 1/4 cup heavy cream
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy, then add vanilla.
- Gradually mix in dry ingredients until smooth.
- Spread the batter evenly in the baking sheet and bake for 15 minutes.
- While baking, prepare the filling by combining syrup, brown sugar, cream, pecans, and cinnamon in a saucepan over medium heat.
- Once the cake is baked, remove it from the oven and let it cool slightly before rolling it up with the pecan filling.
- Roll tightly and chill before slicing to serve.
Notes
- For best results, allow the roll cake to chill in the refrigerator for at least an hour before serving.
- Feel free to add chocolate chips for extra flavor.
