- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 cups all-purpose flour
- 1/2 cup crushed peppermint candies
- 1/4 teaspoon salt
- 1 cup additional powdered sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
- Add the vanilla and peppermint extracts, and mix until combined.
- Gradually stir in the flour, crushed peppermint candies, and salt until a dough forms.
- Shape the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and let cool slightly before rolling in the additional powdered sugar.
- Allow to cool completely on a wire rack.
Notes
- For an extra touch, you can drizzle melted chocolate over the cooled cookies.
- Store in an airtight container at room temperature for up to one week.
