- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 3 (8 ounces) packages cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ½ teaspoon salt
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, and spices. Mix until well combined.
- Pour the pumpkin mixture over the crust.
- Bake for 50-60 minutes, or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For a decorative touch, top with whipped cream and a sprinkle of cinnamon before serving.
