Instructions
- Preheat the oven to 450°F (232°C).
- Rub the roast with olive oil, salt, pepper, garlic, and rosemary.
- Place the roast in a roasting pan and cook for 15 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue cooking until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let the roast rest for 20 minutes before slicing.
Notes
- For well-done, cook to 160°F (71°C).
- Consider using a meat thermometer for accurate results.
