- 1 cup crushed pineapple, drained
- 1/2 cup dried cranberries
- 1 cup chopped pecans

- 1/2 teaspoon onion powder
Instructions
- In a mixing bowl, combine cream cheese, crushed pineapple, dried cranberries, garlic powder, and onion powder.
- Mix until well combined and smooth.
- Shape the mixture into a log and wrap in plastic wrap.
- Refrigerate for at least 2 hours to firm up.
- Once firm, roll the log in chopped pecans until coated.
- Serve with crackers or fruit.
Notes
- This cheese log can be made a day in advance for flavor development.
- Feel free to substitute walnuts for pecans if desired.
