- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup crushed pineapple, drained
- 1/4 cup sour cream
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, mixing just until incorporated.
- Stir in crushed pineapple, sour cream, and heavy cream until blended.
- Pour the filling over the crust and smooth the top.
- Bake for 1 hour or until the center is set.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours before serving.
Notes
- For a tropical twist, top with toasted coconut flakes before serving.
- Make sure to drain the crushed pineapple well to avoid sogginess.
