  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in crushed pineapple and vanilla.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For a more tropical flavor, you can add shredded coconut.
  • Serve with fresh pineapple slices on top.
