Ingredients

  • 1 cup pistachios, finely chopped
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup honey
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and half of the chopped pistachios.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat the cream cheese, sugar, and vanilla until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust.
  7. Drizzle honey on top and sprinkle with remaining pistachios and cinnamon.
  8. Bake for 50 minutes or until set, then let it cool.
  9. Refrigerate for at least 4 hours before serving.

Notes

  • For added flavor, you can toast the pistachios before using.
  • Serve with extra honey drizzled on top.
