Instructions
- In a mixing bowl, combine the grated potatoes, onion, eggs, flour, baking powder, salt, pepper, and crumbled turkey bacon.
- Heat vegetable oil in a skillet over medium heat.
- Spoon the potato mixture into the skillet, forming pancakes.
- Fry until golden brown on both sides, about 4-5 minutes per side.
- Remove from skillet and drain on paper towels.
Notes
- Serve with sour cream or applesauce for added flavor.
- For a vegetarian option, omit the turkey bacon.
