Ingredients

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 3 cups beef broth
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, brown the ground beef.
  3. Add chopped onion and garlic, cook until softened.
  4. Stir in potatoes, carrots, celery, beef broth, and spices.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add the chopped turkey bacon back into the pot and stir.
  7. Cook for an additional 10 minutes before serving.

  • This stew can be made ahead of time and reheated.
  • Feel free to add your favorite vegetables.
