  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  5. If using, fold in the chopped walnuts.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
