  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon additional cinnamon for frosting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Beat in the egg, pumpkin puree, and vanilla until well combined.
  4. In another bowl, whisk together the oats, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually stir the dry mixture into the wet mixture until just combined.
  6. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. While cookies are cooling, prepare the frosting by combining cream cheese, powdered sugar, and cinnamon in a bowl and mixing until smooth.
  9. Frost the cooled cookies generously and enjoy!
