- 1 cup pumpkin puree
- 1 cup rolled oats
- 1/2 cup brown sugar

- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon additional cinnamon for frosting
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
- Beat in the egg, pumpkin puree, and vanilla until well combined.
- In another bowl, whisk together the oats, baking soda, cinnamon, nutmeg, and salt.
- Gradually stir the dry mixture into the wet mixture until just combined.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- While cookies are cooling, prepare the frosting by combining cream cheese, powdered sugar, and cinnamon in a bowl and mixing until smooth.
- Frost the cooled cookies generously and enjoy!
